I have only ever saved my paintings using the file save option (ie not with shortcuts) so this isn't changed for me and once you are used to a set of steps it doesn't really make much difference timewise - plus I always just save to my Queeky account and leave it unpublished if not finished, so never use the save to my computer option (I was a little surprised when I save an unpublished picture her the first time since the changes though - it shows up for me in the gallery with an unpublished flag - now I am expecting it I think I like this additional feature).
The license choices you cannot find are accessed through "My Queeky" then "published drawings"/"unpublished drawings" and then the "edit" choice next to each thumbnail. I know that is more steps but again I often used to publish and then go in and use the edit mode to go back to these because it let me see the full description I was adding.
I haven't really got my head round the other things you mention like the slide show for each individual - still making my mind up
